Custard gingerbread
We purchased the necessary products, flour, everything for the glaze - only 2,400 rubles. No special equipment was required. Another 1,200 rubles were spent on cardboard, glue, ribbons, strings and beautiful paper for packaging. We made it ourselves: I cut out and glued the boxes, my friend painted them with watercolors. This took a lot of time. But I couldn’t find ready-made boxes for our products; the ones that suited us were simply not sold in small batches. So there weren't really any options.
I baked gingerbread cookies from choux pastry, they were all honey, coated with chocolate. They offered four options: small, medium, large in the form of different figures, and you could also order gingerbread houses separately.
At first we used ordinary patterns that we had at home - in the shape of hearts and stars. Then they started making them themselves. We found a beautiful picture, for example a deer. We copied it in a simplified version, cut it out of paper, covered it with tape for strength and applied it to the rolled out dough.
It all sounds easy, but technologically it was a long process:
- 20 minutes are enough to prepare the dough,
- It took 25 minutes to roll it out and mold a dozen or one and a half figures,
- 20 minutes to bake them,
- and another half hour to cool.
- you need to cook the chocolate glaze, this takes about 20 minutes,
- Cover the gingerbread cookies with it and let them dry. Some batches took us almost a day to dry;
- after that you need to paint the gingerbread cookies with white glaze - this will take another 1.5 hours;
- and dry them again for 12 hours.
My entire small apartment was occupied by our products at various stages of production and packaging. As a result, the only free place in the house was my bed.
In total we received about a dozen orders. It was mostly friends and friends of friends on Facebook. The largest order was made by a friend of mine from a yoga class; she needed 35 large gingerbread cookies as gifts for relatives. This was an insane amount for us.
We started working on December 21st. And by the end of the year, after deducting expenses, they earned 9 thousand rubles for three. Then the orders ran out. We assumed that there would be more Christmas ones, but we were wrong.
From a business point of view, these were ridiculous numbers. But this was my experience, and it was useful for me. The idea was to see if I could start working from home as a pastry chef. I realized that I can, but by no means at home, and I want to try myself in this area. Now I have been working as a baker for the second year, so I am now doing this professionally, although without special education.
A little about gingerbread...
Gingerbread is a special type of confectionery that is baked from thick dough with the addition of spices.
