Here, most often, entrepreneurs turn to the local administration with a request to place their pavilion in a place they like - of course, we are talking about cases when the entrepreneur plans to set up a kiosk on neutral territory - near bus stops, in markets and similar places. If you want to be located on private territory, then there is a direct path to the owner of the site, and you will have to conclude a standard lease agreement with him. You can organize your own small donut shop in a relatively small area - 10 m2 will be enough; a non-permanent structure, which can be ordered today from many companies, is suitable for these purposes. A good supplier will always bring the ordered pavilion to the site and install it. The cost of a new pavilion can vary greatly among different manufacturing companies, and also depend on the complexity of the design and quality. The cost of a kiosk for 10 square meters is from 70 thousand rubles. But you will additionally have to spend money on installing a heating system and supplying electricity. If you do open a cafe, then you need to develop a good and interesting menu and, of course, also offer drinks to your visitors. In general, there are no special features here - this business format falls under the category of an ordinary cafe. The cost of renting a room starts at approximately 500 rubles per square meter of space, that is, to rent a room of 50 m2 you will have to allocate 25 thousand rubles monthly. As for the equipment, it is almost the same in both cases, it’s just that a full-fledged establishment is focused on accelerated and large-scale (compared to a kiosk) production of baked goods. In any case, you will need refrigeration equipment, a stove, as well as a special device that can be found in specialized companies. This is a device for making crumpets, as well as donuts and even some other baked goods. If we take into account a simple, “home” unit, then it will be sufficient not only for a pavilion, but even for a normal cafe - in terms of dimensions, such an installation is unlikely to take more than 2 square meters, while its productivity is from 200 to 300 products per hour. It is clear that this is more than enough for a small establishment. Such a car costs about 30 thousand rubles. If we take into account a full-fledged industrial apparatus, then it will cost about 150 thousand rubles, but its productivity will be enough to feed crumpets, donuts or other baked goods to everyone in the area. It is most often not advisable to buy such an installation at first. Moreover, there are also models of average productivity - this is in case an entrepreneur decides to improve his production. The next point is the purchase of the necessary consumables for the production of crumpets. Of course, you can add vanillin, powdered sugar and other ingredients, and if you plan to produce different types of baked goods, then you also need products for filling, but be that as it may, everything you need can be bought from any wholesaler. In big cities you can even go to wholesale trade centers, but in small towns there are always companies or individual entrepreneurs who supply such products. You can always find them on the Internet, for example. That is, there should not be any difficulties at this stage. But we must not forget that the quality of the resulting product is very important here; the products produced in this way must differ favorably in their taste from what you can simply buy in a store. You can import products with your own transport, if you have purchased one, or negotiate with suppliers for deliveries directly to the retail outlet. As a result, the cost of one product is unlikely to be more than 5 rubles (meaning the “classic” crumpet), and it decreases with increasing production volumes. You also need to think about packaging - it can also be supplied by a third party, but if you wish, you can even order custom-made containers. The cost of one container starts from 5 rubles; you can buy plastic or cardboard containers. They usually hold 6 crumpets. That is, to produce 1 thousand crumpets, you will need to allocate 5 thousand rubles for the purchase of consumables and about 1 thousand rubles for the purchase of packaging.

The next expense item is hiring staff for your donut shop. To work in the pavilion you will not need to hire more than 2 people, one of them takes orders and takes part in cooking when there are many orders, the second is a pastry chef, constantly busy preparing crumpets. However, you need to understand that the work schedule of such a retail outlet is usually daily for 10-12 hours. Therefore, it is likely that you will have to hire additional staff who will work in shifts. That is, to ensure the operation of your pavilion you need to hire at least 4 people. Such specialists receive at least 20-25 thousand rubles. This is enough to serve a kiosk, but a cafe needs additional workers - kitchen support staff, a cashier, an administrator, and if you want to provide high-quality service - also waiters (however, for such an establishment this is almost always superfluous ). You will also need to hire a person who prepares drinks: coffee, cocktails, tea. Thus, the staff in a cafe can be about 10 people (and in a large establishment with high productivity even more). At the same time, the entrepreneur himself can take a leadership position in order to get rid of additional expenses. Total - with an average salary of 25 thousand rubles, a staff of 8 people, for example, will cost 200 thousand rubles per month plus up to 30% of the wage fund for social contributions per year.

As for promoting your outlet, the best advertising is word of mouth, and a good location eliminates the need to conduct a full-scale advertising campaign. This applies to a lesser extent to the cafe, because it will be possible to inform the whole city about it, giving information about yourself to all media. If you maintain a website and/or pages on social networks, you can receive feedback from customers, which means you know exactly what customers need and don’t like. But in any case, when a positive reputation is obtained, you can count on a good flow of customers. Usually, already in the first months of work it is possible to make a good profit if the location turns out to be successful and consumers really like the product.

Now let’s calculate the costs of opening a simple kiosk for making donuts. They consist of the following indicators:

  • Purchase of a kiosk, its equipment and installation – from 100 thousand rubles.
  • Equipment – ​​100 thousand rubles.
  • Consumables – up to 15 thousand rubles.
  • Salary for the first month – 130 thousand rubles.
  • Registration – about 20 thousand rubles (in case of registration of a legal entity).

Thus, it turns out that 330 thousand rubles will have to be allocated to open a pyushka store in a kiosk format. The amount of monthly expenses is up to 150 thousand rubles: wages, outsourcing of some business processes, purchase of consumables and payment for electricity. Now let’s make calculations on the profitability of this business. The cost of one donut is 10-15 rubles, so a package of six donuts costs the buyer 95 rubles. It turns out that to cover your expenses you will have to sell almost 1 thousand 600 such packages per month. That's only 53 packs per day. If you already sell 2 thousand packages per month, you will get 190 thousand rubles in income or 40 thousand operating profit (after taxes, 34 thousand rubles remain). The calculation was made taking into account that the kiosk is open at least 12 hours daily.

Now let’s carry out calculations for opening a cafe-cake shop.

  • Rent of premises for the first six months – from 150 thousand rubles.
  • Equipment – ​​300 thousand rubles.
  • Consumables – up to 50 thousand rubles.
  • Salary for the first month – 260 thousand rubles.
  • Registration – about 20 thousand rubles.

The total is 780 thousand rubles for the opening of a café. Monthly expenses will be about 280 thousand rubles. It should be noted that the cafe offers not only donuts, but also many other products; someone comes into the cafe to buy donuts to take them home, someone stays in the cafe to snack on them with coffee. With an average check of 200 rubles, 1.4 thousand visitors per month will cover expenses (this is about 50 visitors per day on average). And this does not take into account those who enter the cafe solely to buy a package of crumpets. In all cases, the productivity of even the most expensive donut machine is sufficient to produce such volumes of products.

However, such a business requires constant development, not only in terms of improving quality and expanding the range, but also increasing its network. If successful, it makes sense to consider opening one or even several additional points. It would also be useful to have reserve funds in case competitors open retail outlets, so that there is an opportunity to introduce some new product into production and thereby gain an advantage. The payback period for a simple kiosk is unlikely to be more than a year (according to our calculations - 9-10 months), but at first all the money earned must be put into circulation. Next, you can think about opening your own donut shops in neighboring cities, and if successful, even start trading as a franchise. Donuts, donuts and other baked goods are a product that is loved by many, and many people will purchase it, especially if it is prepared immediately after ordering and offered fresh to the buyer. You usually don’t have to worry about the lack of customers, especially if you keep prices at an acceptable level, but there are risks here too. So, to summarize, we can say that such a business can be opened with a starting capital of 300 thousand rubles, and if the kiosk turns out to be a profitable undertaking, then you can open an additional cafe or begin expanding the network by opening additional retail outlets.
