How to become a pastry chef at home from scratch? Business plan, package of documents, investments and profitability

One of the excellent options for entrepreneurial activity is a pies business. This is an area of activity for which there will always be demand. The pie business is characterized by a high level of competition, but finding a new place to open a pie stall is not difficult.

The main thing is to earn a base of regular customers. For example, residents of neighboring houses or office workers in the area. To do this, it is necessary to ensure the high quality of the products offered.

The relevance of the business of selling pies

The catchphrase “they are selling like hot cakes” was not coined for nothing.
The announced products have always been in great demand among all segments of the population, therefore they tend to sell out quickly. People line up at the outlets with the most delicious and high-quality goods to try the baked goods “hot, hot.” All this is still relevant today, when the catering market is overcrowded with various fast food establishments. People who are used to having lunch or a snack on the go are increasingly choosing pies instead of foreign hot dogs, hamburgers, and even the extremely popular shawarma. The explanation is simple - the pies are always fresh, hot, and their cost is much lower than competitive dishes. Hot dogs and shawarma are also prepared on site, but the former provides only a standard set of ingredients (sausage, herbs, sauces), and shawarma, although it has a variety of fillings, is too expensive to satisfy a fleeting hunger.

The sale of pies has been and remains relevant because people do not want to waste time eating. And baking is nourishing, tasty and as affordable as possible.

Business Features

Cake is traditionally considered a homemade dessert.
Of course, confectionery factories take an active part in filling the market with products and sometimes offer consumers quite successful products, however, other things being equal, making cakes at home as a business has a clear advantage: during the production process, the master pays attention to the issue of finding an interesting recipe and consumers’ opinions about the result much more attention than a technologist in a large workshop. In addition, a custom-made cake is guaranteed to be fresh: the pastry chef usually starts work a maximum of one day before the date agreed by the client. We can say that the entrepreneur is personally responsible for the quality and taste of the dessert, so any claims from the buyer are unlikely.

Finally, the finished product will exactly correspond to the customer’s wishes regarding its design and taste, while in industrial production, making any changes to the cake manufacturing process will require an expensive reconfiguration of the entire line and the drawing up of a new technological map.

At the same time, an entrepreneur engaged in home production cannot be considered a direct competitor of large confectionery factories. Of course, such a master will attract some of the total mass of consumers, but the products he produces will have a number of distinctive features:

  • This type of product is intended not for regular, but for event consumption at birthdays, anniversaries, weddings;
  • Ordering a cake requires a larger celebration budget, while people use inexpensive factory-made products as dessert for every day;
  • Each cake is personalized according to the client's requirements, which is impossible with factory production.

These features make it possible to distinguish custom-made cake baking into a separate area of business activity, aimed at its own target audience. The main advantages of this type of business include:

  • Small capital investments - to start production at first, you can use equipment that is available in every home;
  • Transforming a hobby into a promising source of income;
  • The opportunity to bake and sell cakes without leaving your home;
  • A huge variety of assortment of confectionery products, which results in the presence of a large number of free niches on the market;
  • Possibility to work without official registration of a home confectionery;
  • The creative nature of the production process;
  • Prospects for the development of the enterprise - many confectioners who start in this way later open their own bakeries and workshops for the production of exclusive desserts.

In the process of organizing the production of cakes, a business plan cannot be drawn up without taking into account the main disadvantage of this type of activity - the lack of stable profit at the initial stage. This situation can be corrected with the help of active advertising and marketing activities, planned and carried out on the basis of information about the presence and activity profile of competitors, as well as taking into account the main preferences and sympathies of local buyers.

Market and competitor assessment

At the preparatory stage, you need to analyze the market and potential competitors. It is difficult to find a crowded place without a fast food outlet. As a rule, in one place they are found in quantities of 3-4 units. And this is not the mistake of entrepreneurs who open a business in an area with an already operating “Shaurma” or “Hot Hot Dogs”. Upon careful study of the market, you will notice that all points sell different products.

A proper analysis of potential competitors includes:

  • identification of a place with high traffic of people;
  • mandatory presence of a retail outlet selling fast food in another direction;
  • determination of purchasing power - just pay attention to the attendance of the establishment during peak hours, weekends and night time;
  • paying attention to the range, prices and related products;
  • type of product – own production or preparation based on semi-finished products.

Important: for the most accurate market analysis, it is recommended to study several areas, places for different purposes and the carrying capacity of people. Choosing from 1-2 options will not be objective, since it will not give a complete picture of purchasing power.

In addition, you should pay attention to the type of competitor’s outlet - a kiosk, pavilion or establishment with seating. The choice again depends on the specific location. For example, in the metro area, seating in a pirogue shop is less relevant than at a train station or near cultural parks and public gardens. In the metro, people are always in a hurry and eat on the go, and at the station there is time before the bus/train departs, so you can sit in a pie shop, order tea, coffee and related goods.

Location – where to place the stall?

Business plan for a pie shop with calculations

The main criterion for choosing a location is high traffic capacity. In other words, so that people look at the appearance of the cafe and want to come in and try the baked goods.

An ideal example is a transparent display window in a shopping center building. This method will allow you to get the desired flow of people who will see the finished product simply passing by. Places near transport stops, bus and train stations, hospitals, markets and other places with large crowds of people will also pay off very well.

If you want to engage only in the production of baked goods, then the best option would be to look for premises for rent away from the city center. Typically, rental prices outside the city are much lower, which will save money.

Do not forget that the premises must comply with all sanitary standards. In this case, it will also be necessary to arrange the supply of finished products to places of sale. An ideal option would be cooperation with school or student canteens, markets, and points at train stations.

Choosing a strategy

The pie business will be an excellent start for those who are thinking about starting their own business in the catering industry. Graduates of culinary courses and schools, experienced and novice chefs, and ordinary cooking enthusiasts will be able to successfully feed the suffering. There are three development strategies that will bring success.

  • Mini bakery.
  • Kiosk with pies.
  • Pie shop at home.

When creating a bakery, significant expenses will be required, but the returns will be high. A home bakery will cost very little, but there may be some difficulties when opening one. In particular, we will have to solve the problem of sales.

pies business at home
Opening a kiosk will require less finance, but you shouldn’t count on super-profits.

Kiosk

Mobile design measuring 4-6 square meters. m., providing for the sale of pies through a special window. The kiosk display is its central part, where the finished products are displayed. Inside the room there is a refrigerator, equipment for preparing or heating food, a table and a washbasin.

Considering the small size of the kiosk, in 70% of cases the products are imported, and the buyer purchases baked goods heated in the microwave. However, sometimes entrepreneurs install an oven inside the kiosk and the entire process of making pies takes place inside the outlet.

The kiosk is relevant for places with high traffic:

  • metro;
  • central park;
  • embankment;
  • student hostel;
  • learning Campus;
  • school;
  • government agency.

The installation of a kiosk selling pies is designed for people who buy products for consumption on the road. However, there are many who simply do not want to waste time visiting a cafe and booking a table, but at the same time they are also not used to eating on the go. It’s not difficult to satisfy the whims of such customers - just install a couple of umbrella tables with standing places near the display case.

Help: umbrella tables will be free for an entrepreneur if you enter into an agreement with a supplier to sell their products exclusively. Companies providing such services supply drinks - Pepsi, Coca-Cola and others.

Mini cafe

A room with an area of 20-25 sq. m. with the release of products through the hall and with the availability of seats in the amount of 4-6 pcs. A mini-cafe is relevant with a maximum assortment, including not only pastries and drinks, but also main courses, salads, and snacks. The ideal place to open this type of establishment is considered to be:

  • railway station;
  • recreational places (parks, squares);
  • market;
  • large shopping and entertainment complexes.

It is considered a big plus if the baked goods and other dishes are prepared on site from fresh ingredients.

How to find premises for a pie shop?

The first thing you need to do for a business to open a pie shop is to purchase a mobile premises. It can be a trailer, a pavilion or a kiosk. You need to choose a room of such size that it can be easily transported to any place of interest.

Next, you need to find the place where the stall with pies will be installed. The land plot must be purchased as a property. It is better to choose a place for such a business near large flows of people. For example, you can find a place near:

  • park;
  • metro;
  • alley;
  • market;
  • hostel;
  • university and others.

If the purchase of a plot of land and a kiosk is not provided for by the amount of starting capital, then the premises for a pie shop can be rented. In this case, the risk of large losses for the entrepreneur is minimized.

Pie kiosk

A small mobile storefront, an experienced baker and a minimum of initial capital. Fast, simple and profitable.

Cost of premises

About 200,000 rubles. Here you should also add a fee for renting a retail space, the amount of which can be found out by contacting the local administration.

Cost of equipment

Baking for such a kiosk will be made at home. It is assumed that the entrepreneur delegates this responsibility to two employees. They will use their own furnaces and tools, only raw materials are paid for.

For the kiosk you need to purchase a microwave oven, a kettle and/or a coffee machine if you plan to sell additional drinks, a refrigerator, etc. You also need to organize the delivery of finished products to the point of sale. To do this, the entrepreneur will need a car. A small used van will be enough. The estimated cost is 200,000 rubles.

Raw material cost

About 60,000 – 70,000 rubles will be spent on food and disposable tableware per month.

Employee salaries

To open a pie business, you need to hire two bakers and two sellers. At the first stage, the functions of a loader, accountant, manager, etc. will be performed by the owner himself. Thus, about 50,000 rubles are spent monthly on paying wages.

The best advertisement for a pie shop will be the smell of baking and a beautiful display. The sign and additional advertising materials will cost approximately 20,000 rubles.

Investment size

So, to open a kiosk you need:

  • showcase and equipment – 400,000 rubles;
  • advertising – 20,000 rubles.

Variable (monthly) costs:

  • employee salary – 50,000 rubles;
  • raw materials - 60,000 rubles.

Total: 530,000 rubles.

When should I expect profit?

In the first month, the cost of opening and maintaining a pie shop, as we established above, will be about 530,000 rubles. Annual costs – 1,740,000 rubles.

According to marketing research, the average number of customers at bakery sales points is 100 people per day, the average bill is 50 rubles. This means that you can earn about 150,000 rubles per month, and 1,800,000 rubles per year. Thus, all your investments will pay off in full within 1 year of operation. If you manage to reduce some expenses (for example, give up a car), then you can achieve payback already in 4–6 months.

Costs and expected profit

As with any business, for a pie shop you need to draw up a plan for income and expenses.

The initial investments will be as follows:

  • the cost of renting the premises is about 10 thousand rubles/month;
  • registration of licenses and other documents for this type of activity: 5 thousand rubles;
  • the cost of equipment is about 70 thousand rubles;
  • purchase of raw materials - about 20 thousand rubles;
  • purchase of semi-finished products - about 10 thousand rubles;
  • other consumables – 5 thousand rubles.

The initial investment for a business to open a pie shop will be about 120 thousand rubles.

opening a pie shop

The amount of monthly expenses will be about 45 thousand rubles.

The expected profit from such a business per month can be about 240 thousand rubles. This amount of income will be ensured if, on average, about 100 people visit the stall per day, and the markup on the products sold will be in the region of 150-200%.

Pirozhkova in a mini-cafe format

An establishment with 4–5 tables, where you can not only buy hot pastries, but also drink coffee in a relaxed atmosphere. Production of the pre-cooking cycle, i.e. pies are baked from frozen preparations.

Cost of premises

How to open such a pie shop? The business plan must include rental payments, so start by searching for real estate. You will need a room with an area of approximately 35–40 m². The price is set by the owners, so the spread can be very large. But, on average, you will need about 50,000 rubles for rent. Plus repairs - 50,000 rubles.

Cost of equipment

One of the main expense items. Basic equipment for a pie shop includes:

  • chest freezer – 35,000 rubles;
  • proofing cabinet – 30,000 rubles;
  • convection oven – 115,000 rubles;
  • thermal display – 20,000 rubles.

Optional equipment:

  • bar module – 25,000 rubles;
  • coffee machine – 15,000 rubles;
  • professional microwave oven – 10,000 rubles;
  • kettle – 3,000 rubles;
  • chairs and tables – 10,000 rubles;
  • refrigerator – 15,000 rubles;
  • dishes – 15,000 rubles.

Raw material cost

About 60,000 rubles will be spent per month on raw materials (dough, fillings, etc.).

Employee salaries

To work in the cafe, you will have to hire two salespeople who would take turns replacing each other. Pie preparations can be ordered directly from large confectionery shops with a full production cycle. The cost of paying salary is about 40,000 rubles.

At the first stage, 20,000 rubles will be enough (signboard, booklets, etc.).

Investment size

One-time expenses:

  • equipment – 293,000 rubles;
  • renovation of the premises - 50,000 rubles;
  • advertising – 20,000 rubles.

Monthly expenses:

  • rent – 50,000 rubles;
  • salary – 40,000 rubles;
  • raw materials - 60,000 rubles.

Total: 513,000 rubles.

When should I expect profit?

Expenses in the first month are 513,000 rubles, annual expenses are 2,163,000 rubles. The daily sales volume of products from establishments of this type is about 12,000 rubles. It turns out that in a month a business owner can earn approximately 360,000 rubles, and in a year – 4,320,000 rubles. Full payback can be achieved in 6–8 months.

We buy the necessary equipment

Standard preparation of pies and related baked goods at home does not require many special equipment and devices. Industrial production will require much more specialized equipment, the set of which, by the way, also depends on the format of the establishment. For kiosks these will be small devices familiar to us, for bakeries and cafe kitchens - they will be the same, but on a much larger scale. In general, it all comes down to the following list:

  • refrigerator or refrigerator;
  • industrial baking oven or oven;
  • dough kneading machine or mixer;
  • deep fryer;
  • proofing cabinet;
  • food processor;
  • apparatus for chopping meat.

Also essential is accompanying equipment in the form of baking sheets, trays, ladles, knives and rolling pins, as well as other cookware. Undoubtedly, customers will also need dishes. You will also have to purchase furniture: the list of calculations should include either chairs, tables, a counter and various shelving with cabinets for a cafe, or small tables, if possible, for a kiosk. It's definitely worth putting up trash cans.

In addition, not only pies will be sold in the establishment, therefore, as a normal business project in this area, a pie shop will require the purchase of a coffee machine and a kettle for preparing warm drinks. Separate display refrigerators should be installed for ready-made drinks in bottles and cans.

Registration of activities

A pie business does not require registration of a legal entity, so the status of an individual entrepreneur will be quite sufficient. The procedure for obtaining an entrepreneur’s certificate takes 2-3 days, and the price only includes payment of the state duty in the amount of 800 rubles. You must contact the tax service with your passport, TIN, paid duty receipt and application.

Registration and preparation of documents

  1. To open a pie shop, you will first need to register as an individual entrepreneur. This can be done either independently or through the mediation of a professional lawyer.
  2. The next step is to obtain permission from the administration (street trading) and draw up a lease agreement. We go to the trade department of the local authorities.
  3. You can’t do without a certificate from the SES. Prepare equipment certificates, documents for raw materials and a production and sales flow chart and invite an inspector.
  4. To obtain permission from the fire inspection service, you need to fill out an application and conduct an inspection. The examination is possible only in the presence of an employee appointed responsible for fire safety, or the immediate manager of the enterprise.

Do not try to circumvent the law and start selling baked goods without permits. This can lead to a serious fine and forced closure of the establishment.

Choosing a tax system

The best option for a pie business is considered to be a simplified system (STS) with 6% tax deductions on income. At the same time, it is possible to reduce this figure by half due to insurance premiums paid for employees. Basis - letter of the Ministry of Finance dated No. 03-11-11/159 dated May 16, 2013.

There is an opinion that the 15% simplified tax system (income minus expenses) is no less profitable, but in this case it is necessary to consider specific business indicators, because in each case the data can look both positive and negative.

Advice: initially it is better to choose the standard “simplified” system with 6%, and then, if necessary, switch to another system.

The OKEVD code for working with baked goods and flour products is 15.81, as well as 52.62 for retail trade.

Required documents

List of documentation for opening a pie shop:

  • permission from the SES for the production and sale of flour products;
  • permission to open a point from Rospotrebnadzor;
  • fire inspection report;
  • permission from the municipal authorities to open a pie shop.

In addition, it is necessary to enter into agreements with the relevant companies and keep the papers inside the point of sale:

  • contract for disinfection and deratization;
  • removal of solid waste;
  • regulatory documentation for the production of flour products;
  • IP license;
  • employee medical records.

Sanitary requirements

Selling pies as a business is a profitable business. But, to open it, it is necessary to study in detail the requirements of the fire service and sanitary and epidemiological station. They will cover the following:

  • maintaining production records;
  • period of storage and sale of finished products;
  • finished product storage technologies;
  • storage conditions for raw materials and finished products;
  • Availability of medical records for all employees.

Also, depending on the type of establishment, separate requirements will be added. For example, a cafe must be equipped with a toilet.

Patent system

Available only for individual entrepreneurs. Allows you to purchase for a certain amount the right to conduct commercial activities for a period of 1 month to 1 year. Exempts from filing declarations with the Federal Tax Service.

Practice shows that it is most convenient to work with the simplified tax system. A simplified system allows you to seriously save on tax payments and get rid of unnecessary paperwork. However, everyone is free to choose for themselves.

We register the project and draw up documents

Whatever format is chosen, you are required to officially register your own pies business. The first step is to register an LLC or individual entrepreneur. An individual entrepreneur is easily suitable for every format, including kiosks and mini-bakeries.

It makes it possible to conduct a small project using a simplified scheme, which will allow the business owner to fill out accounting reports independently and not spend money on an accountant. Calculating expenses and income in this case is simpler.

An LLC is necessary if you decide to open your own large project from a network of locations or are going to employ a significant staff of employees. In addition, an LLC allows you not to make contributions to the pension fund if the organization takes a break in activity.

Also, this type of organization allows you to work with other legal entities directly from the legal entity. But at the same time, it is necessary to have a sufficiently large authorized capital in terms of finances, and besides, registering an individual entrepreneur is much more convenient in terms of time and money for a beginner and an entrepreneur opening a small project.

Nuances of purchasing equipment for production

The equipment necessary for a business is usually purchased, but renting it cannot be ruled out.

Equipment selection

There will be no problems with purchasing equipment. It is sold in many stores and online. You need to choose by size, price and manufacturer.

To bake pies in a cafe they buy:

  • Bake;
  • Dough mixer;
  • Proofing cabinet;
  • Deep fryer;
  • Freezer.

Tables, chairs, hangers, a coffee machine, a kettle, and other accessories are placed in the sales area. Disposable dishes are used.

The kiosk will require significantly less equipment, because the baking is done at home, but it requires a microwave oven and a refrigerator.

Choosing a dough mixer is no joke

While the couple was looking for premises, for the first three months they prepared pies at home in the kitchen. To do this, we bought a small semi-professional oven rented for the Food Market for 25 thousand. She baked four pies at a time. Another 50 thousand was spent on baking equipment, baking dishes and products.

Three of us worked: Munira, Vadim and his mother. Vadim purchased food and delivered ready-made orders, and the women sculpted and baked pies. At the same time, Munira took pastry and cooking courses.

The pies were sold through a website that Vadim assembled himself using one of the construction kits. There were few orders - and those were irregular: sometimes nothing all day, sometimes several pies at once. Clients mainly came through word of mouth.

In December 2014, premises were finally found for a workshop and bakery on the territory of a cold storage plant near the Dmitrovskaya metro station. Renting 53 m² cost 54 thousand rubles.

65,000 R

Cost of renting premises for a workshop and bakery per month with utilities

In order to adapt the premises to the requirements for public catering organizations, it was necessary to make minor cosmetic repairs. We updated the tiles and paint and installed electrical wiring for process equipment. Ventilation was installed from scratch, but water and sewerage were already installed. According to GOSTs, raw materials and finished products should not intersect, so we had to cut another technological entrance to bring in the finished products. 450 thousand rubles were spent on repairs and ventilation.

The equipment was ordered in parallel with the search for premises. The most difficult item on the list was the dough mixer. The pies at Lyubov Pirogova are made from shortbread dough rather than the more common yeast dough. It turned out that few chefs and technologists understand which dough mixer to knead shortbread dough with. You won’t be able to test the equipment before purchasing, and buying at random is a risk.

Depending on the power and model, the device costs 100-800 thousand rubles - this is a serious investment. To choose the appropriate option, the couple consulted with several technologists and eventually bought a model for 101 thousand.

At first they wanted to completely automate production. To do this, they even went to the Munich IBA 2020 exhibition to find equipment. But most of the machines were designed for productivity tens and hundreds of times greater than what the entrepreneurs planned. For example, 1500 pies per hour. It would be a different business and different pies. As a result, Munira and Vadim decided to make manual labor their competitive advantage - this makes the pies tastier.

Before the start, entrepreneurs notified Rospotrebnadzor about the opening. Within three years after the launch, their employees can come at any time and check whether everything complies with sanitary and fire safety regulations and whether the necessary documents are available.

RUB 580,000

Entrepreneurs spent on bakery equipment

For Rospotrebnadzor we developed a production control plan, technical specifications for products, technical instructions for the production process and received a Declaration of Conformity (examination of compliance with the requirements of technical regulations). Several times a year, the guys order bacterial tests from laboratories: washes from the hands and kitchen uniforms of employees, equipment and surfaces.

Sanitary requirements for the premises

Whatever site you choose to organize your project, you must comply with some important requirements from various services such as the Sanitary and Epidemiological Station and the fire department. Often these requirements relate to:

  • technologies for storing finished products and raw materials;
  • shelf life and sale of prepared dishes;
  • reporting on production of products;
  • conditions for keeping dough and other raw materials;
  • equipping the entire room with lighting, ventilation and other communications;
  • It is mandatory for all employees to have medical records.

Among other things, some requirements differ for different formats of establishments. For example, a cafe must have at least one toilet, and some food items cannot be sold as a takeaway. Undoubtedly, baked goods are included in the list of permitted products, so the owner will not lose the main flow of money here.

We purchase raw materials for production

Undoubtedly, making pies is a fairly easy task, and the list of ingredients necessary for preparing this dish is not a special secret to anyone; it is much more important to find out where it is best to purchase the necessary raw materials. Mass production in any case involves communication and cooperation with wholesale suppliers, and this raises the issue of profit and trust.

When trying to find a good supplier, be sure to look at the reviews of others on their services. Of course, in some cases it is better to choose an offer from a little-known company, but with pleasant and favorable conditions. In general, for all manufacturers there is a small list of the most interesting information about the supplier and his product:

  1. Product prices.
  2. Possibility of free delivery.
  3. Product quality.
  4. The time frame within which the goods will be delivered.
  5. Conditions for storing goods.
  6. Possibility of installments.

Remember that it is you who bake and sell dishes from these raw materials, so it would be useful to check the availability and authenticity of documents for this purchased product from the supplier every time. Also, you shouldn’t stick to just one person; new businesses are constantly opening with more favorable conditions and offers.

Let's analyze the business and choose a format

To open a business in any field, it is important to understand what it is, what goals it pursues, and what its features are. In our case, a pie shop as a business project is really good for a beginner due to the ease of opening and running it.

This business will not bring particularly large incomes, but will be an excellent stable option for basic income. In addition, although there are quite a lot of entrepreneurs in this market, there is not much competition: finding a place for a favorable location is still easy, and there is constant demand for the product.

It is only important to make a quality product in order to gather a regular audience. Among other things, the pie business allows you to choose a format that suits the financial capabilities of the entrepreneur. The following establishments selling this product are usually opened:

  1. Small bakeries.
  2. Kiosks with pies, including ones on wheels.
  3. Pie business at home.
  4. Pie cafe.

For a beginner, any option is suitable, except perhaps a cafe. Such establishments use a lot of initial investments and time to promote the project, and in case of failure, there is a risk of losing a lot.

The remaining options are suitable even for a small amount to open a business, but they will not be able to bring as much profit as a cafe. The best option for a completely ignorant beginner to start with is homemade pie production for sale to friends and family.

Assortment compilation

Everything is simple here - the wider the range, the better. First you need to decide on the main direction - pies and their filling:

  • potato;
  • cabbage;
  • jam;
  • rice, egg, greens;
  • berries.

Besides:

  • cheburek;
  • whitewash;
  • puff;
  • sand tongue;
  • cheesecake.

Drinks include tea, coffee, cocoa, sparkling water. In the future, the range will expand due to existing demand or favorable offers from suppliers.

The confectionery business is no longer a cake

The era of mousse cakes, macaroons, and marshmallows was coming. I would have to re-invest in training, equipment, ingredients, or change my field of activity. Then I started writing texts to order. And, lo and behold, it turned out that I could earn the same and more money much easier: without sleepless nights and surprises from the oil side.

Almost all home confectioners work illegally. Because there are requirements: a room of a certain area with tiles, ventilation, etc. Which is impossible in an apartment. For example, Inna registered an individual entrepreneur, but indicated the type of activity as “production of sugar flowers.”

There was a period when the tax authorities began to frequently check confectioners and fine them. In general, I thought this was a good time to finish the activity.

The last few months of baking cakes have been quite enjoyable.
I had already gotten my teeth into it, I had proven recipes, I learned how to decorate well. But then I stopped. Because, it seems to me, custom cakes are a physically difficult, nervous and not very well paid occupation. It’s really possible to succeed in it if it’s really “yours” and you really love this type of income. But I'd rather do journalism. lichnyy-opyt-iz-zhurnalista-v-domashnie-konditery-i-backno

Grocery expenses

Cost of products:

  • flour 10 kg bag - 25 rubles, enough for 2 weeks;
  • eggs 20 pcs. — 30 rub., for 3 days;
  • oil 1 liter - 30 rubles, enough for a month;
  • yeast - 5 rub. for 200 g, one pack is enough for two batches;
  • potatoes 10 kg - 50 rubles;
  • pork meat 1 kg - 70 rubles;
  • onion 10 kg - 35 rubles;
  • salt - 5 rub. pack;
  • cottage cheese 1 kg - 45 rubles;
  • peas 10 kg - 45 rubles;
  • napkins - 3 rubles. package;
  • bags 100 pcs. — 20 rub.

Gas cylinder - 650 rub.

Some products had to be purchased every week, and some were enough for a month. Every month I refilled my gas cylinder regularly. It took me approximately 1,200 rubles to purchase goods for trade.

In the first year I managed to earn 72,000 rubles. Of these, I invested almost 14,000 rubles for the purchase.

How much income can this home-based business generate?

If you are thinking about how to make money on pies, then even working from home you can make a good profit. Let's look at a small example with calculations.

Let's say you can make 2 cakes or pies a day, selling one product at an average cost of 1,500 rubles.

The cost of one product will be on average 500 rubles. The rest will be a markup for your work and creativity.

That is, in one day you will earn 3,000 rubles, and spend 1,000 rubles. The total profit per day will be 2000 rubles.

In a month you can get up to 60,000 rubles in profit.

As we can see, this is very profitable. You can earn money even with minimal investment of time and effort.

Advertising for a pie shop

An ordinary kiosk selling pies does not require mass advertising. The costs of a marketing campaign on TV, radio and even on the Internet will not pay off. The explanation is simple - there are a lot of similar establishments in each district, so people will not go specifically to the other end of the city to buy a “unique” pie.

Despite this, an advertising campaign is necessary and can be summarized in several points:

  • The sign is bright, colorful, with an original name. For example, “Mr. Bagel”, “Pie Guess What”, etc. Fantasy and creativity depend on the entrepreneur;
  • leaflets - at the time of opening and the next 3-5 days, you can use the services of a promoter in the area of the location;
  • billboards – 2-3 posters in the area where the retail outlet is located.

In fact, advertising is not required for the pie business, because if the products are tasty, high-quality and inexpensive, then the news about the opening of the outlet will spread among potential buyers like hot cakes.

How to sell baked goods?

You can start by selling products through friends. This will allow you to develop your first client base and start word of mouth. If we are talking about a birthday cake, then you can invite your friends or acquaintances to bake the cake for free (you only pay for the ingredients). Take a lot of beautiful photos and post it all in the VKontakte group. After 5 - 10 free baked goods, you will already have your own portfolio and full-fledged orders will appear.

With cakes, pies and buns the situation is somewhat more complicated. You will have to go around many small retail outlets, grocery stores and pastry shops. Create for them a colorful catalog with your products and offer them prices that will not be higher than market prices. You can also organize your own sales point near a bus station or shopping center. But this option is only suitable for those who have the time or willingness to employ a seller.

Don’t lose sight of the possibility of advertising on the Internet. A group on social networks and your own website, with proper promotion, can become the main sources of orders. The main thing is to do more bright works, colorful photographs and constantly expand the catalog of works. If you make a really tasty product, then customers will line up.

Baking and pastry mold

If you decide to make custom cakes, then you will have to buy:

– Rolling pins, silicone mats.

During the figurine sculpting course, I bought a special rolling pin for 800 rubles. During the course on flowers, it turned out that this rolling pin is not good enough, and I need to buy another one for 900 rubles. Now I understand that you can roll out a petal with any rolling pin.

– Molds for decorating cakes, as well as for flower petals. During the course on sugar flowers, for some reason I bought molds for a huge number of types of flowers, some of which I had never made. They lie there and rust. It’s just that when you’re a beginner, you don’t know what you’ll need. – Airbrush and food coloring. – Dry and gel dyes. – Molds that help you quickly sculpt figures. We bought medical silicone, which dentists use, and made the molds ourselves. For example, you could stick this silicone around the doll. It froze and a doll-shaped mold was obtained.

One pastry chef worked in a supermarket on custom cakes, making 8 cakes a day. It helped that she had a big bag of molds for every occasion. That is, she did not sculpt the figures, but simply stamped them with these molds.

– Sets of stacks, special sticks with different tips for working with mastic. – Flowers require special wire and tape. – It is advisable to purchase a food printer, because cakes with sugar printing are very profitable - they are made quickly, and they turn out beautifully and effectively. But a printer, ink, and sugar paper are also expensive. My pastry chef friend believed that it had not paid off for her even after several years. I never bought it. – Baking molds, silicone molds for mousse cakes. – Ingredients: cocoa, chocolate, etc.

We really loved going to the confectionery base with our child. There, the kind movers poured half a bag of Belgian Barry Callebaut chocolate for him - white, milk and black circles. They generously poured in half a kilogram or a kilogram. This chocolate cost 600 rubles/kg. This lasted for a couple of years until the head of the base was replaced.

– And many, many more: paper cupcake molds, pastry bags and nozzles, fondant iron, packaging, brushes – the list is endless. “And I bought a pastry mold here,” one of the girls on the course shared. “Imagine, you go out to a client and bring out a cake, all so beautiful, in uniform.”

Then I also bought a pastry mold. By the way, it later came in handy for me many times, for example, for filming on television.

Modern pies

My pie business still operates to this day and brings me a steady income. After 10 years of working in the market, when I carried a wheelbarrow with a can with me every day, it was decided that I could not do this for long.

My daughters found me a small stall that was for rent in the market square, and insisted that I rent the stall and work in it. Moreover, you can put everything you need there: a stove, pans, and food, and sell everything hot at once. I agreed to their persuasion. In addition, the owner asked for 1,500 rubles a month for rent and even offered to take it on a long-term lease with a purchase option.

Calculation of profit and profitability

Start-up costs should also take into account the initial supply of products and unexpected expenses. In total, you can start a business with a reserve of 400,000 rubles. Every month, to ensure the operation of the bakery, you will need to spend about 200,000 rubles. This amount also includes taxes, which the entrepreneur must pay at the end of the quarter.

If we take into account that the profit from one pie is 10 rubles, then the enterprise must sell 20,000 pies per month, or 670 pies per day, assuming a 16-hour working day. On average, one customer takes 3 pies, that is, 200 - 300 pies per day.

sale of pies
A bakery in a walk-through location sells up to 1,000 pies per day, which allows you to recoup your investment in 3-4 months and make a net profit.

In addition, you can sell additional products , such as soft drinks, coffee, chewing gum. On such a part-time job you can earn up to 50,000 rubles per month.

Before you open a pie shop and start preparing a business plan, you need to assess your own financial capabilities. As a last resort, you can contact the bank and get a loan. Today, the loan rate for small businesses fluctuates around 20-25% per annum. Thus, the use of borrowed funds will increase the payback period by two months.

It must be borne in mind that lack of finance can ruin the most brilliant idea. Saving on napkins or disposable tableware will scare away buyers. The best advertisement for a catering company is satisfied customers.

What equipment to choose for selling baked goods?

At the initial stage, for individual orders of baked goods, you can limit yourself to the available kitchen equipment. In the future, it is advisable to create a separate set that is not used for the needs of the family. Do not forget about the quality of the dishes, since with frequent use, low-quality items will quickly fail.

So, the first assistants in creating products will need items that are always at hand:

  • Stove, oven.
  • Set of pans.
  • Cutting knives.
  • A variety of baking dishes.
  • Several types of graters.
  • Frying pans.

If we talk about full-fledged equipment for a bakery, it will cost the entrepreneur several thousand dollars. The standard set of necessary equipment includes: dough mixers, ovens, tables, refrigerators, hoods, cabinets, plumbing equipment, dishwashers.

Before purchasing the above, it is important to clearly study the baking technology in order to correctly calculate the parameters of ovens and dough mixers to ensure the required volume of products. To reduce investments, you can buy used equipment or purchase ready-made equipment.
