What first attracted me to Shokoladnitsa was the popularity of the products, high-quality design and advertising campaign. Yes, there are quite high expenses, but in comparison with future profits, I do not consider this to be completely unaffordable. By the time my coffee shop opened, there was already one “Shokoladnitsa” in our city, but there were constant complaints about it, so I decided that it would not be amiss if I opened my own cafe. I liked everything about the company - training, menu, development strategy, etc. There was probably only one thing that was stressful – the workers. I have heard stories more than once that the staff either steals or behaves rudely towards customers. Perhaps recruiting a team was one of the most important moments, and I spent a lot of time on it. But I liked the result - the guys were not bad, they worked well. But, despite all my enthusiasm, I still didn’t like one thing - the deliveries. Sometimes it was necessary to wait for them for more than one day, because of this the visitors dispersed. In addition, very often there is a lot of work in the kitchen, the equipment needs to be washed very often and the floor must be kept clean and everything in principle (“Revizorro” has not been canceled). At the time of opening, Aralova had experience in the restaurant business: in 2011, under her leadership, a karaoke bar opened in Kursk, and in 2013, a cafe for weddings and corporate events.

It took about a year to launch the Kursk Shokoladnitsa. In 2013, Aralova went to a franchise exhibition in Moscow, where she found out the details and arranged a meeting with company representatives. After her candidacy was approved, the steps to open the coffee shop were laid out almost step by step, the entrepreneur recalls.

The maximum lump-sum contribution for partners in large cities since August 2020 is $60 thousand (approximately 3.8 million rubles at the Central Bank exchange rate as of August 5; previously the price was higher - $70 thousand, which is exactly how much Aralova contributed). According to Trubnikov, in smaller cities discounts are possible - an average of $10 thousand. “We are now loyal to the formation of a commercial offer - in any case, it is formed based on what city it is and what its pricing policy is,” explains Trubnikov. Franchisees enter into a contract with Shokoladnitsa for five years with the possibility of free extension.

Monthly payments are 7% of trade turnover, regardless of the size of the coffee shop’s revenue. There are no minimum royalty requirements, as coffee shop revenue fluctuates depending on the season and economic situation. “Today is a failure, tomorrow is a surge - no one is biting anyone about this,” says Aralova.

According to estimates from the Beboss.ru portal, investments in opening a Shokoladnitsa franchise range from 5 to 15 million rubles. For Aralova, this amount was 17 million rubles, including a lump sum contribution. She took part of the money from her own savings received thanks to the first two cafes, some was lent by relatives, and 5 million rubles. contributed by the venture fund of Promsvyazbank, which since 2013 has been investing in small businesses in industries such as trade, services, and small manufacturing. “Firstly, Aralova had experience in the type of business in which she was going to buy a franchise, and secondly, she showed herself to be a very disciplined, responsible entrepreneur who stands behind her words,” Alena Sokova, head of the fund, confirmed to RBC. The fund issued a loan at 25% per annum, the collateral was a 20% share in the opening Shokoladnitsa.

After signing the contract, Aralova spent approximately four months on renovations. On the opening day, she recalls, people stood in line for hours; in the first three months, almost 400 thousand people visited the coffee shop.

Aralova has not yet repaid the initial investment, but expects to do so within four to five years. According to her, “Shokoladnitsa” brings her more income than each of the two establishments that already existed in Kursk; she does not disclose the revenue. She is currently negotiating the opening of a second Shokoladnitsa in Kursk, this time in a shopping center under construction.

On average, a Shokoladnitsa franchise in the region should pay for itself in two to three years, but due to the crisis, this period is being delayed for many entrepreneurs. According to Trubnikov, monthly profits of coffee shops in the regions in the first half of 2015 fell by 10–15%, and according to individual franchisees, the drop reaches 30–40%.

“Shokoladnitsa” accompanies its partners from the moment the franchise agreement is concluded. “We don’t leave anything to chance. We take every step according to standards and under the control of territorial managers assigned to cities,” says Trubnikov. Such a manager manages from 20 to 30 coffee shops.

As franchisees interviewed by RBC said, the Shokoladnitsa head office leaves them almost no room for maneuver: literally everything is regulated - from the purchase of equipment to the behavior of waiters. “There is a manual for opening, where the phone numbers are indicated, who to call, from whom and what to order, where and what to take, in what sequence, with what frequency,” says Kopach from Tyumen. A team of specialists is dispatched to launch a new coffee shop; On the first day, the establishment often operates in test mode and only on the second day it opens its doors to visitors.

The design of the coffee shop is approved according to the corporate brand book. Under the guidance of the designer, you can choose from three to five options for chairs, sofas and other interior items; furniture is purchased from recommended suppliers. If the required option is found from a third-party supplier, the purchase can be approved at the head office, but, according to Aralova, Shokoladnitsa’s suppliers usually have favorable prices.

In terms of equipment, the choice is even smaller: the company trusts only specific brands. There is not enough freedom, but this approach allows you to more accurately calculate the budget and avoid mistakes, Aralova believes. “I asked the territorial manager a number of questions. Why this particular blender? There are five times cheaper. They told me about the technical characteristics, and the questions disappeared. Now that a year has passed, I already understand that this was the best equipment I have worked with before,” she says. “Right down to the tableware suppliers, it is indicated what, where and in what quantity to order. We didn’t have to sit and think: how many people will come to us, how many glasses and mugs do we need? Everything was spelled out, and in this sense it is very convenient,” confirms Kopach.

Once a quarter, each coffee shop undergoes routine certification. The inspection takes three days: during this time, a commission from the head office comes to the coffee shop and scrupulously checks the establishment for compliance with the chain’s standards, said the administrator of Shokoladnitsa in Saratov, Arina Sakharuk. Based on the results of the administrative and technical assessment, the franchisee must score at least 90 points out of 100, otherwise the team will receive a warning and risk a fine. “The inspector first quietly comes in, eats, checks the dish’s compliance with the technological maps, serving and everything else, and then goes to the kitchen and there evaluates the standards, managers, and all documentation in full. “Revizorro is resting,” Kopach laughs. “For example, a guy and a girl arrive anonymously, and only then do we find out that they were inspectors,” adds Alexei Shilov, who opened Shokoladnitsa in Dmitrov, near Moscow, five years ago.

The results of inspections go into the internal information system: coffee shops are ranked depending on the ratings received. For systematic violations, fines of 150 thousand rubles are provided. To avoid them, the staff had to be literally trained, Aralova admits; it takes at least three weeks to train new people.

Strict control over franchisees is practiced mainly by foreign companies, and among Russian companies this approach is less typical, says Anna Rozhdestvenskaya, head of the franchise sales department and expert of the Franshiza.ru portal. “The most important thing is that the system is objective, because different people check it. It’s not like you agreed and that’s it,” argues Shilov.​​

The Shokoladnitsa chain of coffee shops, owned by entrepreneur Alexei Kolobov, was created in 2000: the first establishment opened in Moscow, not far from the Oktyabrskaya metro station, on the site of a cafe that had existed since 1964.
